Enable stripping on "Mac" builder on /p/chromium waterfall

The mb config wasn't setting the 'enable_stripping' flag and was
erroring out as a result after we flipped it to GN.

Flip Mac builder on chromium waterfall back to gyp.

It looks like 'mac_strip_release' hasn't been ported to GN yet.
I'm not sure what all needs to be done there, so reverting the
builder in the meantime while we investigate.
