Does CMake have a "minimal feature set" checkbox? Is it trivial to select a
minimal feature set?

No, there isn't. This is kind of just handwaving away some fudging (which I
don't remember anymore) to get CMake to spit out something useful, though the
strategy really was to disable as much stuff as possible.
If I remember correctly, I used the GUI version of CMake, and while there were
configuration options presented, part of it was also iteratively fixing
definitions until it was happy enough to output files.
