It seems like these aren't really "common". Aren't they only used by
freetype.gyp? Similar for the others.

I could go either way, but I think it makes sense for any variables we might
want to modify through GYP_DEFINES to be in this file. It kind of documents
which options are available.

It looks like many of the variables are only used by a single other .gyp file.

I don't like these conflicting variables. "not skia_freetype_static" should be
sufficient.

More inspection indicated that if we got to freetype.gyp:freetype,
skia_freetype_dynamic was already defined.  So I can safely remove it.
