Single quotes are not legal JSON.

Yes, I changed writeJsonEscapedCharsOn to escape double quotes instead of single
ones.  I think this case may have worked OK already 'by accident' if there were
never any quotes in the string.

I also fixed the incorrect \x hex escapes in JSON (JSON only allows \u escapes).
